A Plum Job

01PLumsCollanderbfLOThere was this meatball recipe… it called for ground pork and ginger and scallions and garlic and panko crumbs and stuff – all pretty basic and normally in stock around here – but then, there was the sauce…

Hmmm, Barbecue Sauce? No Problem. Hoisin Sauce? I have that covered. Plum Sauce? Well, shoot. Fortunately, Costco provided me with a nice bucket o’ plums, and Savory Sweet Life had recipes for both Plum Sauce and the needed base ingredient, Plum Jam.

Plum Jam:
•2 cups peeled, chopped plums (6 plums)
•1 cup sugar
•1 tbsp lemon juice

07PlumJamCookedbfLOPlum Sauce:
•1 cup plum jam
•1 clove garlic, minced
•2 tsp ginger, minced
•2 tbsp of white vinegar
•1 tbsp Sriracha

First, the jam:

Cook the peeled and diced plums and the lemon juice in a small pot over medium heat for five minutes, then stir in the sugar, bring to a boil, and simmer for 20 minutes, stirring often.

13PlumSauceCookedbfLOThe jam will thicken nicely once it cools. Nice on toast, and just about perfect for the next step;

Plum sauce:

Combine the plum jam with the garlic, ginger, vinegar, and Sriracha in a small sauce pan and bring to a boil, stirring often.

Oh, my!

Nice and zippy! A little bit sweet and then there’s that bite from the Sriracha…

Yup, as with the Hoisin Sauce, this is sooo much better than what you can buy at the store, and really not all that hard to make!

Now, on to those meatballs…
