Celery Succotash Salad

02bCelerySuccotashbzLOFret ye not! There are NO lima beans in this succotash!

In fact, this rather refreshing salad – based on a Rachael Ray recipe – bears little resemblance to your more usual succotash… there are no beans at all (tho’ you could add chickpeas, if you wanted), and this is served cold, and actually tastes good!

Sure, there’s corn; but the star of this salad is celery, and it is more than ready for its close-up.

01aDressingbzLOINGREDIENTS
Dressing:
•1 tbsp Dijon mustard
•1 tbsp yellow mustard
•2 tbsp honey
•1/2 lemon, juiced
•2 tbsp rice vinegar
•1/4 tsp Seasoned Salt
•Black pepper

01bDressSaladbzLOSalad:
•1 bunch celery, thinly sliced
•10 oz frozen corn, thawed*
•1 bag shredded carrots
•1/2 large sweet onion, thinly sliced
•1/2 English cucumber, quartered and sliced
•1 tsp dried thyme

*I used thawed frozen corn, but kernels sliced off a couple of grilled corn cobs would be nice here, too.

02aCelerySuccotashbzLOWhisk the dressing ingredients together and pour over the veggies and thyme in a large bowl.

Toss to coat evenly, then cover and pop into the fridge to chill until it’s time to serve.

Light.

Tasty.

Really kinda un-succotash like.
