Parfait! Better Than Breadcrumbs

01cseasonedcrumbsbzloA while back, I posted a recipe for a nice, if a bit crumbly, meatloaf; which then became very tasty meatloaf quesadillas. For today’s post, I thought I’d pause and share this no-bread breadcrumb concept, because it really is kinda genius, and perfect for folk who can’t or don’t do flour anymore.

The answer?

Oatmeal! And even better than that, seasoned oatmeal crumbs – just the ticket for meatloaf or…

INGREDIENTS
•2 cups rolled oats
•1/2 tsp dried thyme
•1/2 tsp garlic powder
•1/2 tsp Black and Red Spice*
•1/2 tsp Beef Roast Seasoning

02aconeysaucebzlo*Or just use 1/4 teaspoon each black and Cayenne pepper.

Note: feel free to substitute and/or adjust the seasonings to suit your tastes and spice cabinet.

Combine the ingredients together in a food processor and pulse until the oatmeal is finely ground and the seasonings nicely blended in. Store in a tightly lidded container.

Well, I’ve mentioned the meatloaf, but how about replacing the cracker crumbs in Coney Dog Chili Sauce?

Pretty hard to pass that up.

And, yes, I realize that I have my gluten free Coney sauce layered on top of a beer braised Polish sausage on a flour-full poppy seed roll, but…

I don’t really have a problem with flour, and, using the oatmeal in the Coney sauce – and ground turkey in place of ground beef, makes it all just that much less bad for you.

I like that in junk food!
