Maple Syrup Butter

Let’s keep things simple, shall we?

It’s the last day of January, a bit damp and drizzly around about these parts (verging on icy, but, let us skip that for now). Let us, instead, think about good things; things like bacon and waffles and…

Maple Syrup Butter.

Now, I did my research, and a lot of folk go boiling the maple syrup with a cinnamon stick and candy thermometers and such…

No.

All you really need to do, to make a fine maple syrup butter, in my not-so-humble opinion, is to soften a stick of unsalted butter (my preference is Irish, these days), and then combine it with maple syrup and a bit of allspice. A handheld electric mixer is as complicated as this recipe gets.

INGREDIENTS
•1 stick (1/2 cup) unsalted butter*
•1/4 cup maple syrup
•1/2 tsp ground allspice

*Go ahead and use salted, if that’s what you have, but do try the Irish butter.

Add the ingredients to a mixing bowl and combine with a hand mixer until smooth and nicely blended together.

Transfer to a covered jar and stash in the fridge until needed.

Bring on the waffles!
