Beignets in the Air Fryer (!)

See; I bought these silicon ‘egg bite cups’ late last year, thinking that they’d make a fun gluten-free munchie for folk when they come over.

Using my multi-pot.

Haven’t made those yet, but then I came across an allrecipes.com recipe for making beignets using the self-same egg bite cups, not in the multi pot, but in the air fryer!

This, I had to try.

And we’re both happy I did.

Naysayer commenters on this recipe claimed it to be “too cake-like” and, yes, mebbe they are, a bit.

Doesn’t mean that they aren’t tasty, and not too, too much trouble to toss together (see the full disclosure below).

And, I finally got to use my egg bite mold, so, bonus!

INGREDIENTS
•Cooking spray
•1/2 cup all-purpose flour
•1/4 cup white sugar
•1/2 tsp baking powder
•1/8 tsp salt
•2 tbsp water
•1 large egg, separated
•1-1/2 tsp melted butter
•1 tsp vanilla extract
•Confectioners’ sugar, or to taste

Note: the original recipe called for preheating your air fryer to 370º, but my particular model (GoWISEUSA) says that it doesn’t need preheating, so check your own model’s manual to see if you need to do this or not.

Apply cooking spray to your silicon egg bite mold (available, where else, on Amazon).

Whisk the flour together with the sugar, baking powder, and salt in a mixing bowl.

In another (small) mixing bowl, whisk the water, egg yolk, butter, and vanilla together, then stir into the flour mixture until you have a thick batter.

OK, this is the only kinda fussy bit…

In another (smaller) mixing bowl, beat the egg white with an electric mixer until soft peaks form.

Full disclosure: I used my immersion blender in a beaker and settled for wicked foamy egg white. Worked a treat.

Fold the egg white into the batter, then scoop into the prepared egg mold.

Place the filled egg mold in your air fryer basket and cook at 370º for ten minutes.

Remove from the air fryer – note: the egg mold will be hot – then carefully pop the beignets out onto a parchment paper round.

Note: because it really was kinda hot, I let the beignets sit in the mold for a couple of minutes before, basically, pulling each one out of the mold.

Return the unmolded beignets, on the parchment paper round, to the air fryer, cook for an additional four minutes, then remove and dust with confectioners’ sugar.

Enjoy.

It may not be NOLA, but, it’ll do.
