Waffle Fry Nachos

So, to wrap up this whole potato nacho thing; my husband came across a recipe from the nice folk at delish for waffle fry nachos that he very much wanted to try, and, I could actually find frozen waffle fries in the market, so I figured “why not?”

First things first: these were good!

But…

I chose to air fry my waffle fries instead of doing them in the oven and, next time,

I will do the same with the chicken nuggets.

Note 1: the original recipe called for “popcorn chicken” but, with the state of most markets’ freezer sections these daze, I made do with organic frozen nuggets.

Note 2: I am pretty certain that this recipe was sponsored by the nice folk at French’s, because it specified their honey mustard and their mustard barbecue, but, my Zippy & Sweet Honey Mustard worked out just fine, and, as I showed this week, Carolina-Style Mustard Barbecue Sauce is pretty easy to toss together and, among other things, it works a treat with meatloaf!

They did provide a recipe for the Cheese Sauce, which I mostly followed, and which I will be making again, and not just for nachos, so here’s the link.

INGREDIENTS
Nachos:
•Frozen waffle fries (I used half a bag)
•2 cups chicken nuggets
•1/4 cup Zippy & Sweet Mustard

Toppings:
•Freshly chopped chives
•4 slices bacon, cooked
Cheese Sauce
Mustard Barbecue Sauce
•Ranch Dressing

Heat your oven to 425º and apply cooking spray to a rack in a foil lined baking pan.

Bake the chicken for about ten minutes, then pull out of the oven and toss with the Zippy & Sweet (or honey) mustard.

Return the chicken to the oven and bake for another ten minutes or so.

Keep warm while you air fry the waffle fries.

Apply cooking spray to the air fryer basket and add half the bag of waffle fries.

Apply cooking spray to the waffle fries and cook at 400º for about 20 minutes, shaking the basket after ten minutes.

Note: If you plan on using the whole bag, you will more than likely need to cook the fries in two batches, so, once the first batch is done, transfer to a pan in a 250º oven and keep warm (with the chicken, more than likely).

To serve, arrange the waffle fries on a plate or platter, top with the honey mustard chicken nuggets, then crumble the bacon over the top. Drizzle with the Cheese Sauce, the Mustard Barbecue Sauce, some ranch dressing, and sprinkle the chives over all.

Nice nachos!

Note: if you don’t have an air fryer, you can cook the waffle fries in the 425º oven along with the chicken, arranging the baking trays on two different shelves and rotating them after the first ten minutes. The waffle fries will take about 20 minutes longer to cook and crisp up than the chicken, so you will still need to keep that warm while finishing the fries.
