Beef & Pickle Dip

Hang in with me for a minute, because, YEH…

Beef and Pickle Dip?

Made with Dried beef?

Yeppers! And you know what, it is pretty darned spiffy, not at all salty, and, well, really, it is more of a spread than a dip; but it really is nice on crackers.

Think Corned Beef Salad, but beef.

And cream cheese.

INGREDIENTS
•8 oz cream cheese, softened
•1 jar dried beef, chopped
•1 cup diced Ranch Pickles

Note: regular dill pickles will work as well.

Beat the cream cheese until fluffy, then stir in the chopped beef and pickles.

Transfer to a bowl, cover tightly, and let rest in the fridge for a few hours or (always more better) overnight to allow the flavors to blend well.

I was expecting a salty mess; but my husband came across the recipe somewhere on the interwebs and was really excited to try it on wheat crackers.

And, YEH. I will make this again. We enjoyed the crackers with Buffalo Wings.
