I love me my lamb chops; and when the weather and Rich’s mood conspire to offer them up nicely charred from the grill, I am truly one happy camper! We buy the loin chops – they’re the most common in our markets, and, more importantly, available at a great price at our local Costco.
Due to a change in schedule, these little beauties spent two days sitting in a bag of my chop marinade, and I am uncertain if it was that extra day sitting, or the fact that Rich did ‘em on the Weber, but MAN! were these tasty!
We normally plan two chops per person, ermmm, tho’ neither of us would say “no, thank you” to three of these little beauties if offered, and Rich likes his with a bit of horseradish sauce on the side.
INGREDIENTS
Marinade:
•1/2 cup Worcestershire sauce
•1/2 cup vegetable oil
•2 tbsp Dijon mustard
•1 tsp hot sauce
•2 or 3 garlic cloves, crushed
•1 onion, roughly chopped
•Pepper corns
•A dash or three of Trader Joe’s 21 Seasoning Salute (or any salt-free herb seasoning mix)
Chops:
•4 lamb loin chops
•Olive oil
Whisk the marinade ingredients together and pour over the chops in a zipper bag. Settle the bag into a flat bottomed rimmed bowl, flip to coat the chops again, and pop into the fridge overnight. Flip the bag at least one more time (maybe in the morning) to coat the chops well – when mine ended up spending an extra day in ‘the soup’ I flipped ‘em a few extra times whenever I thought of it.
Start your grill, remove the chops from the marinade, and allow to come to room temperature (about thirty minutes).
Brush the grill grates with olive oil – or oil a grill pan (Rich prefers the pan), and pop the chops on for about five minutes per side.
Remove to a fresh platter and let rest for five minutes.
Might I suggest popping some asparagus on the grill pan while the chops are resting?
