Well… not just a dip, really, this fine little bit o’ blue cheese goodness makes for one fine salad dressing, and it is Oh! so good with Buffalo chicken!
All that said, I cannot deny how very well this goes with chips and pretzels, so you do what you like, it is all good – and a snap to toss together with stuff you either already have on hand, or easily found at the market; so thanks to the barefoot contessa for another winner – this one from her book “how easy is that?”.
INGREDIENTS
•1/4 cup chopped shallot
•1 tsp garlic, minced
•2 tbsp lemon juice
•7 oz. Greek-style yogurt
•1/2 cup mayonnaise
•1 tbsp sour cream
•4 oz blue cheese, crumbled
•1/2 tsp Earl’s (or other hot sauce)
•1 tsp sea salt
•1/2 tsp black pepper
•3 tbsp fresh chives, minced
Add everything but the chives to a small mixing bowl, or the bowl of your food processor, and stir or pulse until you have a smooth, but still chunky, dip.
Add the chives and stir or pulse again to mix.
This is good right away, but much better, in my not-so-humble opinion, if you make it a few hours or (even more better) the day before and allow the flavors to blend in the fridge.
Dip.
Salad Dressing.
Buffalo Wing Topper.
It is ALL good.
