I was putting some stuff together for the grill, and came across an interesting recipe for sweet potato wedges that called for a poultry rub… well, SPECIFICALLY, Bobby Flay’s Poultry Rub.
Hmmmpf.
I like Mr. Flay’s recipes and TV shows as much as the next guy, but I am not about to search for and buy a jar o’ spice stuff just for one recipe – my spice rack is already filled close to bursting, thank you very much.
Enter da Google (All Praise… you know the drill), where I found a TON – well, a bunch, anyway – of poultry rub options made, much like my chili powder, out of the spices I already have. SWEET!
AND, as a bonus, I was able to compare and contrast the options offered to come up with a rub that I think will do right by my sweet potatoes – tho’ I now kinda wish I’d picked up that Hungarian Paprika on Saturday. Oh well, we muddle through with the spices we have…
INGREDIENTS
•1 tbsp paprika
•1 tsp pepper
•1 tsp celery salt
•1 tsp sugar
•1/2 tsp garlic powder
•1/2 tsp dry mustard
•1/2 tsp Cayenne
•1/2 tsp Caribbean Calypso Seasoning – or any fresh or dried citrus zest
Combine together and store in a covered container.
SO, is it good on sweet potatoes?
