Parfait! Ham Salad

HamSaladVertbfLOLast time we checked, I had tried out a ham salad recipe from Miss Leslie via Rachel Ray’s magazine, and it was… good.

Not as good as the ham salad o’ my memory from back in the day at UMass, but good.

So, when I found myself in need of a little sumpin’ sumpin’ for lunch, and a small can of ham presented itself in the front of the pantry (what can I say – I am a SUCKER for those Walgreen’s coupons!), I knew it was time to try, once again, to recreate that most favored lunchmeatspread of my university days (The Hatchet and Pipe had the best o’ the best, by the way).

Gooder.

Loosely based on a recipe I found on allrecipes.com, this baby comes pretty darned close to that cherished noontime-ish treat – I think the secret may be the pimiento – it’s not just for olives, ermmm, or cheese, anymore!

HamSaladBowlbfLOINGREDIENTS
•12 oz. can of ham, diced
•2 oz. chopped pimiento, drained
•1/2 cup diced onion
•1/2 cup chopped sweet gherkins
•1/4 tsp salt
•1/2 tsp black pepper
•1/2 cup mayonnaise

Stir everything together, cover, and pop into the fridge to let the flavors blend a bit.

BINGO! You got yourself some fine ham salad!

RollUpbfLOI rolled mine up in a flour tortilla with a bit of fresh romaine and tossed a few of Trader Joe’s finest baked onion ring snack thingys on the side.

Yum! AND, I no longer have to worry about being late for afternoon studio!
