When I first tried adding blueberries to Aunt Beezy’s soda bread, I tried a trick I saw on the TeeVee – this person was making chicken pot pie and said that stirring in frozen peas kept ’em from getting crushed in the mixing process.
Hmmm.
Would it work with blueberries?
Actually, it worked a treat! My only issue was that they seemed to make the bread itself a bit too mushy in places. Back to the drawing board – well, OK, back to da Google – and this cool recipe from the nice folk at Wholeliving.com, which I love because it is so darned simple!
INGREDIENTS
•1 cup blueberries
•1 tsp honey
That’s it! Cool, no?
Heat oven to 225º.
Toss the blueberries with the honey – I would recommend not trying this with frozen blueberries – do not ask me how I know this – then spread on a parchment-lined baking sheet.
Bake for about two hours, until the berries are nicely shriveled.
Cool and use as you will, they’ll last on the shelf in a sealed container for about a month (according to those nice folk at Whole Living).
