Rich is feeling a lot better since he more or less cut dairy out of his diet. The unsweetened coconut milk from the dairy case at Woodmans works as well for him in his morning coffee as it does in a tall glass with cookies at the end of the day; and he’s found that just a little bit of butter and/or cream cheese is a good thing.
So… how’s about a dip? I thought it a good time to see how his system would take to a yogurt-based munchie, hopefully, without needing to pop a Cow-Be-Gone pill.
INGREDIENTS
1 cup plain yogurt
2 tbsp dried onion
2 tsp dried shallots
2 tsp dried chives
1 tsp 21 Seasoning Salute
1/8 tsp Seasoned Salt
1/8 tsp celery salt
1/4 tsp pepper
1/2 tsp Earl’s (or Tabasco)
2 tbsp milk substitute
Note: I didn’t for this batch, but in the future plan on cutting down the yogurt to 3/4 cup and adding 1/4 cup of mayonnaise, which will, I think, smooth out the flavor nicely.
Combine all the ingredients together in a bowl, then cover and pop in the fridge for at least 3 hours to let the flavors blend – and to let the liquids rehydrate the onion and shallots.
Voici! A tasty little dip for everyday or a party, and there was no popping of Cow-Away pills needed!
I call that a good thing.
