I came across this recipe for ‘Craig Claiborne’s Ultimate Hamburger’, and thought that it needed to be tried.
But…
it needed to be tried my way.
Mr Claiborne called for heating a skillet with salt, then adding the burgers and cooking; adding butter, additional salt, sauces and seasonings once the burger is done and on the bun.
Apologies to Mr Claiborne et al, but I was kinda thinkin’ about working the sauces and seasonings into the burgers, then cooking them with sliced sweet onion and a good bit of Perky! Pickled Peppers before topping each with a nice chunk of aged Provolone.
Now that, my friends, is an ultimate burger!
INGREDIENTS
•1 lb ground beef
•Salt and pepper to taste
•1 tsp Worcestershire sauce
•1 tsp hot sauce (this one is nice)
•1 tbsp lemon juice
•2 tbsp butter
•Sliced sweet onion
•Perky! Pickled Peppers (or jalapeño)
•Provolone cheese, sliced
Combine the beef with some salt, pepper, the Worcestershire sauce, hot sauce, and lemon juice , then form into three or four patties.
Sprinkle salt in a large skillet then add the butter and melt over medium-high heat.
Add the burger patties and sliced onion and cook for ten minutes.
Flip the burgers, add the pickled peppers, and continue to cook for another five minutes or so.
Top each burger with some of the sliced provolone, cover the skillet, remove from the heat, and let rest for five minutes.
Your burger is now ready.
So…
is it the ultimate burger?
I dunno about ultimate, but this is one pretty bangin’ bit o’ beef!
We had ours on lightly toasted French bread rolls with mayonnaise, ketchup, yellow mustard, dill pickle, and a bit of romaine and considered ourselves pretty darned pleased with the results.
