Barb’s Aunt Beezy makes the best soda bread! Well, Barb’s Bob (not Don’s Bob, or Justin’s Barb, for that matter – we seem to know a fair number of Barbs and Bobs) makes the best soda bread – from Barb’s Aunt Beezy’s recipe – and he shared the details.
I served this for dinner alongside barbecued corned beef and honey mustard coleslaw, but really, this bread is good anytime, I’m even thinking of turning some into croutons for salad.
INGREDIENTS
•3 cups flour
•2/3 cup sugar
•1 tsp baking powder
•1 tsp baking soda
•1 tsp salt
•1-1/2 cup total raisins (I used dried cherries)
•2 tsp melted butter
•2 eggs, beaten
•1-3/4 cup + 2 tbsp buttermilk
Preheat oven to 350º.
Whisk the flour, sugar, baking powder, soda, and salt together in a large mixing bowl.
Stir in the raisins or cherries, or whichever dried fruit you prefer.
Combine the eggs, buttermilk and melted butter together and stir into the flour mixture just until blended, don’t over mix.
Pour the batter into a greased 5 x 9 loaf pan and bake for 60 minutes, until the top is lightly browned, and a toothpick inserted in the center comes out clean.
Cool the soda bread on a rack, then tip out of the pan.
Serve with butter or, mebbe even more better, chive cream cheese.
