Root Beer Float Cake

04aRootBeerCakebfLORich, dark chocolate with a hint of spice topped with vanilla buttercream and turbinado sugar on top; this cake really does taste quite a bit like a root beer float!

And its kinda stoopidly simple to toss together, too.

All you need is a chocolate cake mix and 12 ounces of root beer – any brand will do, just don’t use diet – and you can forget about the water and eggs and oil and anything else called for on the cake mix box.

Cake:
•1 dark chocolate cake mix
•12 oz good root beer (not diet)

Buttercream Frosting:
•1 cup butter, softened
•3 cups confectioners’ sugar
•1 tsp vanilla
•2 tbsp whipping cream
Turbinado sugar

01bAddRootBeerbfLOCombine the root beer and the cake mix in a mixing bowl on low speed for about half a minute, then increase the speed to medium and continue to beat for two or three minutes.

Turn into a prepared baking pan and bake according to package instructions. I used a buttered 13×9 inch glass pan, so baked mine at 350º for 35 minutes.

03eButterCreambfLOSet the cake aside to cool on a rack.

For the frosting, cream the butter on low speed with the confectioners’ sugar in a large mixing bowl until well blended, then increase the speed to medium and continue to beat for three minutes.

Add the vanilla and heavy cream, then beat for one more minute, until the frosting is light and fluffy.

Spread on the cooled cake and sprinkle some of the turbinado sugar over the top.

Tasty cake!
