Bacon & Cheese Tot Cups

Rich was a bit under the weather, and had expressed an interest in Tots for dinner.

I mean, who doesn’t love tots?

Thing is, the nice folk at delish.com had just provided me with an interesting twist:

Tot Cups! With cheese and bacon!

Who could say no to that?

Fun fact: tots are gluten free, so, bonus!

INGREDIENTS
•Cooking spray, for muffin tin
•36 frozen tater tots
•1 cup cooked bacon, chopped
•1 cup shredded Cheddar
•1 cup shredded Mozzarella
•Sour cream, for topping

Apply cooking spray to a 12-cup muffin tin and heat your oven to 350º.

Place three tots in each cup, then pop into the oven for 20 minutes, until they are soft and golden.

Remove from the oven and press a shot glass into each trio of tots to make a tot.

Note: a bit of cooking spray applied to the shot glass works a treat.

Divide the Cheddar and Mozzarella among each of the cups and top with the bacon.

Set the oven to broil, then cook the tot cups for a couple of minutes, until the cheese is melted and the bacon nicely crisped.

Remove from the muffin tin and serve.

A dab o’ sour cream, and mebbe a sprinkling of chives and you are good to go.
