Pimiento Cheese Deviled Eggs

Two great tastes that taste great together!

No, not chocolate and peanut butter; pimiento cheese and deviled eggs!

I’ve made a version of this before, but this time, I’ve jazzed things up a bit by using some jalapeño cream cheese and adding a wee, tiny bit of my new fave Hot Dog Relish.

In the past, I have also tried using roasted red peppers in place of the pimientos, but I think I prefer the pimientos, so…

INGREDIENTS
Pimiento Cheese:
•2 tbsp whipped jalapeño cream cheese
•1 tbsp Hot Dog Relish
•1/4 cup mayonnaise
•1/2 tsp garlic powder
•1/2 tsp onion powder
•1/2 tsp black pepper
•1/2 tsp Aleppo pepper
•1/2 tsp celery seed
•1/2 cup chopped pimiento
•2 cups shredded Colbyjack cheese

Eggs:
•10 hard cooked eggs
•1/2 cup pimiento cheese
•1/4 cup mayonnaise
•1/2 tsp black pepper
•1/2 tsp Cajun Power Spicy Garlic Pepper Sauce – or your fave hot sauce, to taste

Combine all of the pimiento cheese ingredients together in a mixing bowl until nicely blended, then transfer to a covered container and stash in the fridge. This is great, of course, for sammiches and crackers and such, but we are here for the eggs, so…

Cut the eggs in half lengthwise and put the yolks in a bowl.

Add the pimiento cheese and remaining ingredients and mash together with a fork until, again, nicely blended.

Place a spoonful of the yolk mixture in each egg white half, then cover and stash in the fridge until ready to serve.

As always, you could garnish with paprika and/or sliced green olives, but these tasty little treats are more than able to stand on their own.
