Back in the day, my Aunt Buzz would fry up some ground beef, cook a package of Kraft Mac and Cheese, add a can of Campbell’s tomato soup, heat through, and call it…
Zanzetti.
And it was very good.
Over the years, I’ve played around with it a bit; adding diced onion to the ground beef; sprinkling in Italian Seasoning with the tomato soup, y’know, “gorping it up” as
Aunt Buzz used to say.
But this time, my local market took my in a completely different direction with this Carne Asada marinated pork, chicken, and beef combination.
So, yeh.
Sorry, Buzz, but this was gorped up in the very best possible way.
INGREDIENTS
•1 package taco seasoned meat
•2 cups diced sweet onion
•1 package mac and cheese
•1/4 cup butter
•1/4 cup milk
•1 can tomato soup
•Shredded Mexican blend cheese
Brown the meat with the onion in a large pan until the meat is cooked through and the onion is tender. Transfer to a colander to drain.
Fill the pan with water and one teaspoon of salt and bring to a boil.
Add the mac and cheese and cook according to the directions on the box.
Drain the macaroni, then return to the pan with the cheese packet, milk, and butter.
Stir until the butter has melted and the pasta is coated with the cheese sauce.
Stir in the tomato soup, then the drained meat and onion mixture and heat through.
You could, of course, eat this right away, and it will be very tasty,
Or…
you could turn it out into a baking dish, top with shredded Mexican blend cheese, and bake at 350º until the cheese is ooey gooey and the casserole is nicely heated through.
Serve with a salad, and some ranch dressing.
