Another Aioli

I know, but this one is really, really nice!

And easy, too!

A quick search of this blog will show that I have posted quite a few Aioli recipes, with home made mayonnaise, adding Siracha and da google knows what else.

But this one, from, I *think,* the nice folk at Food & Wine, has become my new fave; partially because it does come together so fast, and, of course, because it is so good.

Of course, my version has extra garlic and some of my fave hot sauce added, because, why wouldn’t I?

INGREDIENTS
•1/2 cup mayonnaise
•3 gloves garlic, minced
•2 tbsp chopped parsley
•2 tsp lemon juice
•1 tsp Cajun Power Spicy Garlic Pepper Sauce, or your fave hot sauce, to taste
•1/4 tsp black pepper
•1/4 tsp Cayenne
•1/8 tsp salt

Add all of the ingredients to a medium bowl, then whisk until nicely blended.

Transfer to a small jar, cover tightly, and stash in the fridge for a few hours, if possible, to really allow the flavors to blend.

As it happens, this made exactly enough Aioli for my plans for dinner one night, from the same unconfirmed source…

Seared Cod with Spicy Mussel Aioli.

O. M. G!!!

Mebbe my new fave cod recipe; and I used frozen cod and mussels, so it was all definitely a “company” dinner on a a budget.

But, I won’t tell if you won’t.

Those details, though, tomorrow.
