Roast Pork With a Jezebel Glaze

For our Sunday supper, my husband expressed an interest in a roast pork with Cream Mashed Potatoes and French-Style Peas on the side.

I found boneless pork loin roasts on a “Buy One, get One Free!” deal, so, my choice of roast made, I went in search of a recipe…

hmmm… this one recipe served with Jezebel Sauce looked good, but a wee, tiny bit too zippy to serve to my mom-in-law, who does not share our tolerance of zippy foods.

So! I made a slightly milder version of my own Jezebel Sauce, and then used that as part of the glaze for the roast pork.

Worked a TOTAL treat!

INGREDIENTS
•1 (3 lb or so) boneless pork loin

Glaze:
•6 tbsp Jezebel Sauce
•6 tbsp Worcestershire sauce
•2 tbsp your fave steak seasoning

Heat your oven to 325º and apply cooking spray to a roasting pan.

Whisk the glaze ingredients together until well and truly blended.

Position the pork roast in the baking pan, fat side up, then pour the glaze evenly over all.

Note: it’ll be runny, no worries, just spoon some of the run-off up and over the roast.

Pop into the oven, uncovered, for 90 minutes, basting every 30 minutes.

Baste again, then cover the pan (with foil or with your roasting pan’s lid) and bake for another 30 minutes.

Remove from the oven and let rest for 15 minutes before slicing.

Serve with more Jezebel Sauce, if you like, but the glaze imparted so much flavor and kept the roast so nicely tender, you really do not need it.

This was just dinner chez nous; but if your Sunday Roast is gonna be more of an occasion, go along with the Jezebel theme and serve your regular Jezebel Sauce spooned over a block of cream cheese or wheel of Brie and serve with crackers. Works a treat with Kielbasa, too.

It is all good.
