Medianoche Mayonnaise

As I understand it, Medianoche (“Midnight”) Mayonnaise was made for adding a nice bit of flavor to the classic Cuban (ham or pork, cheese, pickles, and mustard), samich and it does.

Here at our house, it goes much, much farther and is used much more.

I slather it on Swordfish Steaks before air frying, and I used my latest batch as the base brushed on home made pizza before adding basil and tomatoes and Mozz.

Lovely.

INGREDIENTS
•1 cup mayonnaise
•1/4 cup Italian dressing
•1 tbsp Cajun Power Spicy Garlic Pepper Sauce – or your fave hot sauce, to taste

Whisk the ingredients together until nicely blended, then cover and stash in the fridge until needed.

I think you will need a lot.

I mean, just consider this take on the ever classic Cubano
