Artichoke and Sesame Roll Croutons

My kitchen was loaded with leftovers, Air Fryer Chicken Thighs, sesame rolls, a nice “everything” salad kit that was coming up on expiring.

Something had to be done.

A main course chicken salad for dinner it would be!

And, even though my salad kit had croutons, those sesame rolls, and a jar of marinated artichoke hearts would be a nice add-on.

INGREDIENTS
•4 sesame hamburger rolls, cubed
•1 jar quartered marinated artichoke hearts

Heat your oven to 250º.

Toss the artichoke hearts, and the marinade with the cubed rolls in a large bowl, then arrange in a single layer in a rack set into a rimmed baking pan.

Pop into the oven and bake until the bread is nicely crispity. Mine took a full hour to get to where I wanted them.

Remove from the oven and allow to cool completely before storing in a tightly covered container.

To make the salad, bone and chop the leftover chicken thighs (or rotisserie chicken, if you prefer), and toss with salad kit, and the croutons.

We thoroughly enjoyed ours with Medianoche Salad Dressing.
