English Muffin Pizza

I still had some of that Spicy Tomato Sauce left in the fridge, so why not use it up with one of my childhood faves, English Muffin Pizza with ground beef and Swiss cheese?

My sauce is a might bit zippier than what my mom used to make, so feel free to substitute your own fave pasta or pizza sauce. I also used Bay’s Brioche English muffins, but, trust me, sourdough works a treat, too.

The key is to cook of the pan liquids and then reduce the tomato sauce.

INGREDIENTS
•Ground beef
•Diced onion
•Tomato sauce
•English muffins
•Swiss cheese

Cook the ground beef and onion in a large pan over medium heat until the beef is browned, the onion tender, and any pan liquids have been cooked off.

Add the tomato sauce and continue to cook until the sauce has reduced and thickened.

Heat your oven to 375º and arrange the English muffins on a baking sheets.

Top each muffin half with a spoonful of the ground beef mixture, then top with a slice of Swiss cheese.

Bake for ten minutes, until the cheese is nicely melted and the muffin edges are a bit browned in places.
