Fruit Salad, Thai Style

Cool, refreshing, low fat (but without all those ‘lite’ additives), and pretty darned simple to toss together with stuff you probably have around the house anyway?

Then this is the salad for you!

I saw Booby Deen make this on his Food Network Show and knew I had to try it; pineapple and mango in a honey-lime juice dressing with just a bit of spice…

•1/4 cup light coconut milk
•1 tsp honey
•1 tsp Thai hot sauce, such as Sriracha
•1 lime, zested and juiced
•1 tbsp sesame oil
– I used 1 teaspoon of sesame chile oil and thought it just about perfect
•Sea salt and freshly ground black pepper

(one mango equals about 1 cup)
•2 cups diced pineapple
(one pineapple equals about 3 cups)
•2 scallions, thinly sliced
•2 tablespoons unsalted peanuts

First, make the dressing by combining the lime juice and zest with the coconut milk, honey, Sriracha, and sesame oil.

Pour the dressing over the mango and pineapple in a large bowl, add the scallion and peanuts and toss to combine.

Taste for seasoning and add sea salt and pepper, if you think it needs it.

Simple, and tasty. I like that in a salad.
