OK, so, mebbe not a blizzard, per se, but, it has been snowing more or less non stop for two days now, and, if it is not a blizzard, well, after two days and a foot or so of snow and spotty plowing, well… it should be.
Fortunately, I have the answer to your snow day related baking needs – and – bonus! – you more than likely already have all the ingredients in your fridge or pantry.
So, thanks to my mom-in-law for spotting the recipe at the back of a mystery.
INGREDIENTS
•1 unbaked pie shell
•3 cups sliced strawberries
•1 cup sugar
•4 tbsp butter, melted
•1 egg
•5 tbsp flour
•2 tbsp brown sugar
Combine the sugar with the egg, two tablespoons of the butter, and two tablespoons of the flour in a mixing bowl until smooth.
Fold the strawberries into the batter and pour into the pie shell.
Toss the brown sugar with the last three tablespoons of flour and two tablespoons of butter with a fork until mixed and crumbly.
Sprinkle the brown sugar mixture over the pie, then bake for 50 minutes, until the center is set.
Note: you will need to cover the edges of the crust after about 30 minutes, to keep them from browning too quickly.
Remove from the oven and allow to cool before serving.
Whipped cream on top is nice.
I had my doubts pulling this out of the oven, but it really is a very good pie. Next time, though, I think I will bake it as a tart.
