Waldorf Coleslaw, now With Apple Relish!

I have long posted about one of our fave coleslaws, a “Waldorf” version, with chopped apples added.

My husband, who doesn’t really like coleslaw even admits that this is now his go-to cabbage salad.

So…

Since I had some of that Apple Relish leftover, I got to wondering how that would work instead of chopping up a fresh apple?

Pretty frikkin’ nicely, as it worked out.

INGREDIENTS
Dressing:
•1/3 cup mayonnaise
•1 tbsp sugar
•1 tbsp lemon juice
•1 tsp vinegar
•1/4 tsp Seasoned Salt
•1/4 tsp black pepper
•1/4 tsp Aleppo pepper

Salad:
•3 cups shredded cabbage (coleslaw mix)
•1 apple, cored and diced,
or 1 cup of Apple Relish
•1/2 cup diced celery
•1/2 cup chopped walnuts, optional
•1/4 cup diced red onion or scallions
•1 tsp poppy seeds

Whisk the dressing ingredients together in a large bowl, then add the salad ingredients and toss to coat.

Transfer to a covered bowl and stash in the fridge until ready to serve.
